La Zaira - Enoteca con cucina

Enoteca la Zaira is a place born from a careful observation of the evolution of customs and customs in terms of meals away from home. We wondered what people are looking for when they go out today? In our opinion, in Valsamoggia people are looking for a place that offers a good compromise between the flavors of tradition and the needs of new food customs. By traditional flavors we mean those reassuring that are the basis of our tradition and that characterize our Emilian dishes perhaps expressed through the great classes but a little less exploited in Valsamoggia as the cutlet Bolognese or passatelli that Only recently have returned to the tables of the trattorias. But also a normal tortellino or tagliatella pulled to the rolling pin. So far nothing stands out. The next step was to try to go a little further. In the menus of restaurants and traditional trattorias, the vegetables that we all love to eat and little cooking are always bound to the miserable role of side dishes.

Out of fashion, but with a unique taste

So we thought of dishes such as the "dish of the garden and the forest" in which seasonal vegetables triumph, soups or salads a little different from the usual, to please the female audience always struggling with the scale. Finally we thought of all those dishes that are absolutely out of fashion for most but that a niche of good taste like a lot: the products belonging to the famous fifth quarter: tripe, liver and liver.
